Hungry Hillbilly was born from a simple truth: the best food comes from the heart. Owners Nikki and Israel grew up surrounded by the rich culinary traditions of Appalachia — slow-cooked beans, hand-rolled pepperoni rolls, and hot dogs piled high with homemade chili and slaw.
After years of cooking for family and friends, Nikki and Israel decided to bring those flavors to the people of Pasco County. In 2026, the Hungry Hillbilly food truck hit the road — and it hasn't stopped since.
Every recipe is made from scratch using real ingredients and time-honored techniques. No shortcuts, no frozen food, no compromises. Just honest, hearty Appalachian cooking served with a smile.
